Coconut Lime tea time

I baked a coconut lime square specially for tea time today. I am serving our tea in a  yellow and gold cup with an extended saucer which serves as a snack plate. The set is Queen Anne bone china. This is a very delicious square…just the right amount of tartness. I love lime! Here is the recipe: Coconut Lime Squares Ingredients For crust 3/4 cup plus 2 tablespoons all-purpose flour 3/4 stick (6 tablespoons) cold unsalted butter, cut into bits 1/3 cup sweetened flaked coconut, toasted and cooled 1/4 cup confectioners' sugar 1/4 teaspoon salt For custard 4 large eggs 1 cup granulated sugar 1/3 cup all-purpose flour 1/2 cup plus 2 tablespoons fresh lime juice (from about 5 limes) 1 tablespoon freshly grated lime zest (from about 2 limes) 1/3 cup sweetened flaked coconut, toasted and cooled Preparation Make crust: Preheat oven to 325°F. and butter and flour an 8-inch square baking pan, knocking out excess flour. The May-June 2009 Victoria magazine is one of my favorites, featuring blue and white... one of the open pages with an article on linens...it just happens that I have one of the patterns... There is also a feature on blue and white Wedgewood ... I have photographed some of my pieces alongside the article... ....here is my interpretation of blue and white... After a nice break in sunny Arizona, we are ready for Spring in Manitoba. Just a few pics of what we were doing in the last while… ..A view from our bedroom window… ..flowers from Trader Joe’s… …watching a CUBS spring-training game… …Sightseeing in the beautiful desert… …shopping, LOTS of shopping!! including a visit to  the “French Bee” All in all, it was a fun and relaxing time…
