TEA TIME RECIPES

we are posting recipes for yummy tea time treats. My recipe is for scones. I seem to be called on to bake these for many occasions. They are supposedly the very ones served at the Empress Hotel in Victoria, B.C., at their special cream teas.

If you try them, please leave a comment

Here is the recipe:
Scones

3 c flour
½ c sugar
2 Tbsp. baking powder
½ c butter
1/3 c golden raisins
1 c whipping cream
2 eggs

Mix the flour, sugar and baking powder. Cut in butter until pea sized. Stir in raisins. Beat eggs and add cream. Gradually add liquids to dry mixture. Mix until no dry spots remain.. Roll or pat to 1 inch thickness. Cut into circles or diamonds , brush with egg/milk wash and sprinkle wth sugar if desired, and rest for ½ hour.
Bake at 350 degrees for 12-15 minutes or golden brown. Makes 16

Enjoy the scones!

Oh these look so delicious! I think scones are perfect for any time of the day. And we have the same china, the one with the floral design. I just love it and so enjoyed seeing it here in your photographs. Thank you!

Hi again Millie,
I do have a recipe on my site for making vareniki. We make them with a cheese filling and then bake them in butter and half and half and serve them up with sourcream and syrup :)

Millie, I love the idea of putting a egg/milk wash and sugar on the sconces ~ especially ones with fruit in them. Thank you for sharing this recipe.

Have a lovely week!

Hi again. Thanks for the clarifying comments you left on my blog about your china. I have the teapot in the Aynsley pattern, too. Thanks for giving me the pattern names for other china and cake plate. You're right -- they are similar!

Such beautiful scones! I've already heard about the Empress this morning so I am not quite as ignorant visiting your blog as I would've been just a few short minutes ago. Thank you for sharing this recipe and your photographs make me want to bake scones now!
